WThis is a home-style take on a beverage from a new drinks list. It's a party-sized pre-mixed which is packed full of flavours associated with Christmas time, which makes it perfect for hosting a holiday party. Any leftover syrup you can use for morning drinks, puddings, or for another batch of the drink.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Place the listed items into a pot, bring to a gentle boil, stirring to dissolve. After that, remove from the stove and leave to reach room temperature entirely. Transfer into an sterilised bottle, seal keeping it in the fridge, where it will keep for about a month.
For the Batch Mix: Mix all the liquids in a large bottle, let it rest for one hour, then strain , ideally through a fine cloth, making it fully clarified.
For serving: Measure 85ml from the cocktail base into your stirring glass filled with ice, gently stirring carefully for about 60 seconds to cool it down. Pour into a frosted cocktail glass or equivalent, garnish with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
